Gluten & Dairy Free Chocolate & Almond Cake (GF, DF, & V)

Following on from my lemon and polenta syrup cake this chocolate cake can be make GF, DF & V as you wish ! Perfect for any group of people. Plus it tastes just like a fudgey brownie.
The Recipe --
What you need:
150 millilitres regular olive oil
50 grams cocoa powder (Ensure GF if necessary)
125 millilitres boiling water
2 teaspoons vanilla extract
150 grams ground almonds
½ teaspoon bicarbonate of soda
1 pinch of salt
200 grams caster sugar
3 large eggs (replace with 1/4 cup of unsweetened apple sauce per egg for V)
Step 1:
Preheat your oven to 170 degrees C. Grease a 23cm cake tin / non stick rubber cake tin (with a small amount of olive oil).
Step 2:
Sift the cocoa into a jug and add in the boiling water. Mix carefully into a runny paste. Add in the vanilla extract.
Step 3:
Mix together the ground almonds, bicarbonate of soda and salt into a separate bowl.
Step 4:
Place the sugar, olive oil and eggs into a standing mixer / another bowl if mixing by hand. Beat the mix together for about 3 - 4 minutes or until pale and fluffy.
Step 5:
While beating pour in the cocoa mixture. Following this add the almond mixture gradually until combined.
Step 6:
Pour into the prepared tin and bake for 35 - 40 minutes. Test the cake with a skewer, it should come out mainly clean except for some fudgey chocolate crumbs. Once cool remove from the tin and enjoy !
