Caramelised Apple Turnovers

These caramelised apple turnovers taste great and wont take you too much time to make ! Rough puff pastry is great for quick pastries like these !

The Recipe --

Rough Puff Pastry:

230g plain flour

170g butter

pinch salt

150ml ice cold water

1 egg (glaze)

Cinnamon and caster sugar for dusting

Caramelised Apples:

500g baking apples

150g granny smith apples (or other tangy apples)

200g Sugar

50ml warm water

25g butter

The Pastry --

Step 1:

Sift the flour and the salt into a bowl. Cut the butter into small pieces and add to the flour.

Step 2:

Add half of the water, and mix with a knife. Keep adding small amounts of water until a stiff dough is reached. The butter should still be in chunks. Step 3:

Roll out the dough on a floured surface in a rectangle shape. Fold into thirds, turn once clockwise and roll out into a rectangle. Repeat 2 - 3 more times until all the butter has been properly incorporated into the dough. Step 4:

Wrap in clingfilm and chill for 30 mins.

The Apples --

Step 1:

Peel and dice the apples. Spread into a shallow baking dish. Preheat the oven to 180 degrees C.

Step 2:

Place sugar into a saucepan. Melt over a medium head stirring with a wooden spoon. Once the sugar is melted reduce the heat and cook until the sugar becomes a light amber caramel.

Step 3:

Pour in the warm water. then add the butter.

Step 4:

Pour the caramel over the apples and cover with foil. Bake for about 30 minutes. Remove foil and bake for a further 5 minutes until the liquid has evaporated. Let cool.

Assembly --

Step 1:

Cut the pastry into 10cm x 10cm squares. You may have some left over which you can freeze and use at a later date (or make more turnovers).

Step 2:

Place 1 - 2 tbsp of the apple mix onto the pastry. Fold the pastry over on a diagonal and seal with a fork.

Step 3:

Whisk one egg and brush on top of the turnovers. Save the remaining to brush during baking. Sprinkle with sugar and cinnamon.

Step 4:

Bake for 15 minutes or until puffed and golden brown. Every 5 minutes brush with more egg glaze.

Enjoy for breakfast or dessert ! Any leftover apples are great for breakfast toppings also !
