Perfected -- Crunchy Fudgey Berry Chocolate Brownies

These brownies are my absolute go to !

They are perfectly fudgey with that crispy topping every brownie should have.

You will need --

200g unsalted buter

3/4 cup of cocoa

2 cups of caster sugar

1/4 tsp of salt

4 large eggs

A splash of vanilla extract

3/4 cup of flour

1/2 tsp of baking powder

2 cups of frozen berries

Step 1:

Preheat the oven to 180 C.

Step 2:

Line a 20 x 30 cm brownie tin with non stick baking paper.

Step 3:

Melt the butter and combine with the cocoa, sugar, salt, eggs, and vanilla extract. Once combined beat the mixture in a standing mixer or by hand until the colour lightens (about 5 minutes in a mixer or 10 by hand). This step is important ! the more air you can get into the mixture at this point the crunchier your brownie top will be.

Step 4:

Sift the flour and baking powder and fold into the mixture making sure not to knock too much air out. Then fold in your berries.

Step 5:

Pour the mixture into the brownie tin and bake for 40 - 50 minutes. This part can vary depending on the size of your tin. I suggest to check the brownie at 40 minutes and then check at 5 minute intervals. Your are looking for a skewer to come out clean but the mixture to still be wet (The brownies will cool to the perfect fudgey texture). Cool completely in the tin before cutting.
